I use MediaMonkey 5 to edit text & album art instead of iTunes. I am at right around 20,000+ songs (mine is the 160GB model)), and I notice a good chunk don't display the album art on the iPod even when I replace the art completely through MM or through iTunes.
I have found a workaround for adding album cover art to MP3 albums on iPod using a Mac with Apple Music. Please note that while the album artwork may be present in the folder, it may not show up on your iPod unless you follow these steps for each song in the album:
I use music brainz Picard. Insert playlist folder or single track and it scans said folder and finds album art. Once you download it places cover art into folder with the tracks. Have done this with most of my 17,000 song library. I’d say 90 percent have cover art.
