You can use more RAM, on a devkit. It is difficult to replace the RAM chips even for the same size, you'll need to modify the ID resistors if you switch RAM chip brands. Not sure if retail software will care about more RAM, or are even aware of it. Console software are usually hard coded to use only the RAM it is supposed to have.
