Start by mixing the dressing ingredients in a large bowl. Whisk the garlic and vinegar then drizzle in the olive oil while continuing to whisk.
Heat 1 tablespoon of oil in a large non-stick frying pan over a medium heat, sprinkle in the garlicky breadcrumbs and cook for 15 minutes, or until golden and crisp. To roll out your pasta, clamp a pasta machine firmly to a clean flour-dusted surface (feel free to use a rolling pin – see tip).
