It's kind of useful to shoot a cast iron skillet to see it's temp, but I find sprinkling some water on it to observe the Leidenfrost behavior to be quite good enough to show hot vs stinking hot. IR thermometers will read more accurately on cast iron than shiny polished side of a stainless pan.
