What do both of them even do on a hoe? EDIT: So far I've tested and silk touch seems to be the better one. I'm pretty sure fortune gives me more seeds when I harvest wheat but silk touch makes more blocks drop like leaves.
You can make an automatic bonemealer, so that all you have to do is place the seeds into a chest that's is attached to a hopper and the composter, and it will compost the seeds for you! I'm fairly certain that's how it works, but you can find easy tutorials for it on Youtube.
