I am successfully running 3 VN's on the Mac M1 with 'crossover' by codeweavers. Those three VN's are Fate Stay Night, Grisaia, and Cafe Stella. The installation can be a bit complicated but it is possible to have them working 100 percent.
Yeah, a Boot Camp installation of Windows is by far the best solution to run VN's on Mac. In some cases, like Shiny Days, Windows 7 is optimal to reduce technical difficulties, but for most other VN's, Windows 10 works like a charm on Mac.
