Satisfaction Guaranteed. Not to be eaten raw, Japanese Ume Plums are green, sour, and very astringent. However once pickled, fermented, or cooked into a syrup they are very delicious. Fresh Ume plums are only available during a short window during spring. Try cooking them into a syrup or preserving them to make the traditional Japanese umebosh.

Blooming in late winter with red, pink, and white flowers, both the plum and cherry trees are heralds of spring in the Japanese seasonal lexicon (for more on Japanese flowers, see our hanakotoba article ).
