You can change into a member of your own kind or even into yourself. You retain your own ability scores. Your class and level, hit points, alignment, base attack bonus, and base save bonuses all remain the same.
29 sty 2013 · If you're not a Human, you could Alter Self into a Human for (level+3) skill ranks and a bonus feat you qualify for (certain feats can make a given skill a class skill). If you want to switch what skill/feat you get, just Alter Self into a different Human.

Magic Missile only gets a special callout because it doesn't even need an attack roll at all. Well, not Orb, 'cause that's a touch attack.
Shield creates an invisible, tower shield-sized mobile disk of force that hovers in front of you. It negates magic missile attacks directed at you. The disk also provides a +4 shield bonus to AC. This bonus applies against incorporeal touch attacks, since it is a force effect. The shield has no armor check penalty or arcane spell failure chance.
Gender isn't a physical trait, you don't need a magic spell to alter that. It doesn't specify changing sex, but it does specify "distinguishing characteristics", which one could argue that sex falls under.
