Beef salad is an easy, 10-minute, delicious mix of ground beef and chopped herbs, coated with fish sauce, lime juice, ground chilli and ground rice. Enjoy it as a low-calorie meal with fresh veggies.
Preparation. 1. Chop all the veggies for the salad and place them in a large bowl, along with the edamame, herbs, and peanuts. 2. Make the peanut sauce. 3. Blend all ingredients in a food processor or blender until smooth. 4. Add water as needed to thin the sauce to your desired consistency.
This recipe is an Autumn/Winter version of a Thai beef salad, with roast pumpkin and some spinach tossed through it. I use Thai dressings like this one so often on salads. The kaffir lime really makes a difference to this salad, but if you can’t get hold of it you could use lime zest.
