I have tried changing them back from the Settings app as well as the Control Panel. I have observed that this happens mostly while unzipping files using WinZip.

29 maj 2019 · When an outdated app tries to set itself as a default, Windows will reset to the Windows default. The only way I’ve been able to get away from this issue in our environment was by updating the apps.
