11 cze 2024 · Heat oil in a sauté pan over medium-high heat. Add shallot and garlic. Cook until translucent, about 5 minutes. Add asparagus, salt, and pepper. Cook 5 minutes more, until the asparagus is tender and bright green. Set aside. In a bowl, whisk eggs. Add green onion, chives, lemon zest, milk and cheese. Add cooked asparagus mixture. Mix to combine.
Add asparagus and saute for 3-4 minutes, then add garlic and saute for another 1 minute. Add tomatoes and cook for 5-6 minutes or until tomatoes are tender. Cook pasta until al dente according to package instructions. Whisk together 2 tablespoons of cheese, pepper, and egg in a bowl.
Extra-virgin olive oil – It adds rich, fruity flavor and helps the asparagus soften as it cooks. Fresh lemon juice – For brightness. And salt and pepper – To make all the flavors pop! Trim the woody ends from the asparagus, and chop the spears into 1-inch pieces.
