There's a huge amount of samurai and Japanese-inspired fantasy throughout manga and anime, which is probably part of the reason it's not too represented in prose fantasy. If you're interested in that sort of thing, I highly recommend the Blade of the Immortal manga series as an incredible fantasy-action samurai saga.
I wouldn't personally recommend this for Samurai/Japanese flavoured fantasy. First book with its political intrigue is mostly fine but second book depicts the Asian stand-in culture as a backward civilisation which needs a White hero to revolutionise those backward values.
