The original 2 was definitely too easy, but I think that was done to make the game more accessible. I'd agree that the 2 remake is harder, but it feels less like that and more that it's unrewarding.
It is literally just an upgrade in every way. 2 and 3 are very different, you'll get different experiences playing the original and remakes, esp 3. 2 at least is the same general structure and areas/fights, but 3 might as well be a completely different game.
