If you like contemporary art, it's possible to do Hauser and Wirth, the arts district galleries, the Broad, and the MOCA galleries in one day if you start early and pace yourself through them. Book tickets ahead for the Broad.
I would start by going to the bigger LA galleries, like Hauser&Wirth, the Kayne Griffin Corcoran, and maybe Human Resources. From there, find out smaller galleries, and follow whatever you're interests are. Also, go to museums. Some of my favorite art shows in LA have been museum retrospectives.
