500gb won't be enough, but neither is 1tb. ultimately, the right decision is to get whichever you want (probably the 500gb) and then get a usb harddrive when you fill the console up now that it's supported.

Go for a PS4 Pro if at all possible, that to me was a significant upgrade. Depends how much more expensive the tb is, if it’s more than 75$ go for the 500gb one. But you’ll be surprised at how quickly 500gb can go out.
