You are right, the vinyl deals better with water but both are floating floors and are prone to trapping water in between their underlayment and subfloor potentially causing mold. I would not lay this on top of your laminate as it could cause what I just described earlier....
If the house didn't already have fairly new pergo in it when we bought, I'd have gone with LVP just for the extra assurance against water damage. Our house is a starter 3/2, so if I remodel down the line I'd probably go with LV tile in bathrooms, and LVP everywhere else.
