Usually if a game supports VR it will launch in VR when launched through Airlink even if it’s not part of Steam. I often use Viveport and launch games from it with no problem and without interacting with Steam.

First off, my game WAS in fullscreen mode, but wasn't filling the screen. Nothing was working. In my case I'm using a laptop and displaying only on my TV via HDMI to use like a console in my living room, so that would probably contribute to the cause and MY particular solution.
Edit: For me, mouse issue fixes when you enter a level, otherwise it's busted on the intro screen. Fullscreen breaks upon game start, however in a level the fullscreen works fine. Unfortunately I've got nothing to fix your issue.
