Below are step by step instructions for the rule I created for an out of office reply to be sent on Tuesdays. I did test this and it did work. This will only work as a weekly re-occurrence.
In Calendar, on the Home tab, select New Event. Add a title for the event, then select the start and end dates. To block out an entire day (or days), slide the All day toggle on. In the Options group, select Busy, then choose Out of office from the drop-down. Select Save.

We now want to automatically enable and disable an Out Of Office message on the mailbox for after hours and holidays. I already have most of the code written to check for any ongoing meetings that would enable and disable the Out of Office when the meetings start / end.
