The Digital Infrared Thermometer is pre-set at an emissivity of 0.95 which is standard for most organic materials and is optimised with all Ooni baking stones. To change the emissivity, press and hold the Mode button for five seconds. Once in Emissivity Mode, use the Unit button to cycle through the numerical values.
