Jim isn’t a first time restaurateur: He started cooking with wood in 1984, got his first smoker 30 years ago, and owns the restaurant group Noble Food & Pursuits, comprised today of Charlotte’s The King’s Kitchen, Copain, Noble Smoke, and two locations of Rooster’s Wood-Fired Kitchen.
