19 paź 2021 · Steel ratings are not about “ranking” steels in terms of what is better than another, but understanding the different balances such as toughness vs edge retention. Other factors that can be added in are corrosion resistance, hardness, and cost.
21 lip 2011 · For instance, notice that 8Cr13Mov, 14C28N, and Nitro-V have equal edge retention ratings while 440A has a higher rating. Does this surprise anyone else? Using current production knives in these steels, Nitro-V and 14C28N have significantly better edge retention than 8Cr13Mov and 440A. I'd love to see this addressed by Larrin.

Just like S35VN, S30V forms hard carbides that give it an all-around good performance in terms of edge retention, toughness, and corrosion resistance over Nitro V knife steel. Nitro V beats S30V in ease of sharpness and may even beat S30V in sharpness if sharpened to perfection.
Nitro v is much much better than both cpm154 and n690 in the edge retention department. It isn’t a super steel necessarily but it will give you decent edge retention while being pretty easy to sharpen. Good luck. Please review these charts for steel comparisons.
