The toughness of Nitro-V is reported to be in the range of 20-22 ft-lbs in Charpy impact tests, while S30V is shown to have a toughness of about 10 ft-lbs in transverse Charpy C-notch testing.

Is Nirto V better at edge retention than s30v? Nitro V is AEB-L with added nitrogen and vanadium. AEB-L is a real old timer razor steel that takes an absolutely fantastic hair popping edge super easily (bonus: Michael Walker's personal favorite steel). Nitrogen behaves a bit like adding more carbon, except that it wont make it more rust prone.
If you want stainless but also toughness, you’re probably not gonna want S30V or M390. Even though those are more expensive steels and might make you feel better about paying $200 for a knife, in the end they may not be the right steels for the job.
