Nitro V is AEB-L with added nitrogen and vanadium. AEB-L is a real old timer razor steel that takes an absolutely fantastic hair popping edge super easily (bonus: Michael Walker's personal favorite steel). Nitrogen behaves a bit like adding more carbon, except that it wont make it more rust prone.

Just like S35VN, S30V forms hard carbides that give it an all-around good performance in terms of edge retention, toughness, and corrosion resistance over Nitro V knife steel. Nitro V beats S30V in ease of sharpness and may even beat S30V in sharpness if sharpened to perfection.
26 sie 2024 · Nitro V beats S30V in case of perfect slicing. The blade is highly capable of making a suitable and perfect cut when S30V is not so smooth to do so. Nitro-V vs M390. Nitro V steel blade belongs to the high end category where M390 is considered as a premium steel.
All depends on your use requirements for the knife. If you want stainless but also toughness, you’re probably not gonna want S30V or M390. Even though those are more expensive steels and might make you feel better about paying $200 for a knife, in the end they may not be the right steels for the job.
