Nectarines have more vitamin C, vitamin B2, and vitamin K than peaches. They stay firmer for cooking and contain more vitamin B1, vitamin B3, and vitamin B5 than peaches once they’re cooked. Peaches, on the other hand, are better for soft-textured recipes and baked goods.

In nectarines, fructose accounts for more than a third of the simple sugars; the rest is from glucose and sucrose.
Pregnant women diagnosed with elevated blood glucose or gestational diabetes may have these fruits, but only in minimal quantities. As nectarines are sweeter and have higher sugar content, peaches are preferred, but typically about half the amount of those with normal blood glucose levels.
