Middleton Made Knives: Echo Chef. These knives are made in South Carolina by a small knife maker. This is his Echo product line, although he also does custom and limited run stuff. Comfort. Rounded choil and spine, balanced at the bolster. Super comfortable handle - most comfortable of my knives. Pinch grip with the choil is nice.
