1 cze 2014 · This study aimed to determine the protein contents of the sprouts of Vigna radiates (mung beans), Lens culinaris (lentils), and Cicer arietinum (chickpeas) using the Kjeldahl and Lowry methods.
Thereby, the aim of this chapter is to discuss the process of legume sprouting, biochemical changes and final health benefits in food applications. Also, measures on safety of legume sprouts to avoid foodborne outbreaks will be discussed in detail.
