Depends if your team needs dps or burst, attack damage or magic damage. Manamune build is all about burst and deals significant magic damage. IMO Since you're a beginner go ad. Ad is just better, people go AP cuz of nostalgia which is completely understandable.

I decided to main Kai'Sa, because she is interesting and strong champion, she also have a lot of build options, you can go AD One-Hit, AD Crit, AD Off-Tank, Hybrid, AP On-Hit, Full AP, AP + AS, basically if you know how to connect some items and runes you can do whatever you want with this champion, because you have both AD and AP ratios on Q ...
AP Kai’sa deals damage by hitting W AND stacking her passive, and to stack passive you will need your autos - which deal AD damage. So getting Q evolve first and maxing Q is still very beneficial, especially in the early game.
