Use this map. https://jeanropke.github.io/RDR2CollectorsMap/ B4 u have the metal detector and or shovel unlocked, filter your list by, flowers, cards, heirlooms, alcohol bottles. Then go for jewelry, coins etc once the shovel & detector are unlocked and bought. Sell full sets for much more money.
Just collect anything you find; cards, plants, eggs, non metal detector dig spots. You can sell individual items to Madam Nazar for a bit of XP too but you want to be saving them for sets really, you get a lot of XP selling those.
