The most recent version doesn't allow you to sync apps to your ipod, mindblowingly. So I'm working my way through versions between 10.6.3 and current to see if any work. Maybe there's an easier way to do this though.

Plug your iPod touch 2G in to your PC. Open a terminal, and navigate to the IPSW file that you downloaded, e.g. cd ~/Downloads. To perform a full erase restore, type idevicerestore -e iPod2,1_4.2.1_8C148_Restore.ipsw and press enter. Wait for the restore to complete, and the iPod touch 2G to reboot.
