Simply OneNote is the best app. I've been researching the best workflow for taking typing notes on a desktop app and switching to handwriting on an iPad and Onenote is where I'm at right now as the best option (but I'm actually still not very happy with it).
We have an old iPad Mini 2 lying around the house. I'd love to convert it to a digital notebook for notetaking (e.g. work meetings, recipes, mini projects etc) but I'm not sure what app would work well with it.
Pros: portability, great battery life, good selection of note taking apps with various functionalities, you should be able to find a system that works for you. The display is gorgeous. Cons: writing on it with the Apple Pencil has a bit of a learning curve.
