The short story is you have to create a DSU server, which DS4 Windows does. You enable the server in the app, and then in Dolphin, under controller config, hit add sources(something like that, my memory is foggy). This allows the DSU server to show up in the controller config.
You can bind basically any input method to dolphin on pc, I use a ps4 controller personally. Ps4 controller works best bound to a classic controller in supported games. You can also bind inputs to wiimote movements for games that don't support the classic controller.
