YES, both for PS3 and Xbox 360 (the latter NEEDS to be modded to accept ANY HDD or SSD internally, via USB you can use 2tb SSD no problem, but the USB generation is 2.0) installing an SSD internally is a worthwhile upgrade that will make your console a little bit quieter, but also faster and it's a cheaper upgrade compared to a smaller HDD.
IMHO the most convenient way is to play ISOS out of external SSD. That way the PS3 reads from both internal HDD (game data) and external drive and you get the fastest loading times. When PS3 has to read both disc image and game data out of internal HDD, loading times are longer.

CNet did a pretty good guide on installing and formatting replacement drives for the PS3 HERE. Use the built in PS3 backup utility to backup everything on your old drive to a FAT32-formatted external hard drive (not the replacement drive). For help formatting to FAT32.
