I have fast horses, jumping horses, and top health horses, but maybe only one or two that have top jump AND top health. My goal is to get a good number of horses with top jump/health and decent speed, then use your method to breed higher speeds into that set.
To feed a horse when it does not have full health, simply hold the food in your hand and right click the tamed horse. You can only feed it the foods listed on the Wiki, as far as I know. I suggest making hay though since I am pretty sure that you can place them on the ground like cake.
You can do it by finding 2 horses, using speed 2 potions on them, then you breed the horses. The parent horses will eventually lose the speed 2 effect, but the baby horse will be 40% faster than its parents.

A horse can only be fed when it's low on health or if it's untamed. If a horse is full on health it'll just mount the horse. As for your "activate love mode" I don't see why it doesn't work unless the horse isn't actually tamed.
9 maj 2015 · how do you simply feed the horse without riding it? im holding the wheat, i right click on the horses mouth, and it makes me ride the horse. when i hold shift and right click on the horse, it brings up the horse inventory. when i left click, it hits, and harms the horse.
