After experimenting around, I decided to go for a full-on defensive guard counter + incantation faith build for my 1st Elden Ring run (NG), I've used the wiki's templar build as a basis then did my own thing, and now I have a fairly good build with good damage and good defence.
The three top 'generic' greatshields are the Golden Greatshield, the Distinguished Greatshield, and the Eclipse Greatshield. All three of these have decent guard boost for their weight, and shrug off hits from even end-game bosses once upgraded.
