To adjust the payment method on your current memberships, you will need to cancel the membership and repurchase. You can add and delete payment methods for individual purchases via the Payment Methods tab in Settings on your account or at checkout.
From what I know, the roblox billing email is associated with things u bought. It's stored in either xsolla or stripe. Roblox has a stripe merchant account which can edit billing email, thus talk to a stripe employee and they will give u a ticket reference and then mention it to roblox support.
