You can remove skills in the Alexa app and from the Alexa Skills store on the Amazon website. Go to the menu and select Skills. Select Your Skills (at the top of the screen). Select Disable Skill, and confirm that you want to disable the skill (if prompted).
If you subscribed to an Alexa skill that had that option, you'll likely find it listed here: https://www.amazon.com/yourmembershipsandsubscriptions. If you don't see a cancel option, but see a "settings" button or similar, click on that and see if the cancel option is listed there.

I'm very sorry that you have 600 Alexa Skills enabled unexpectedly! Unfortunately, the only way to disable these would be individually through the Alexa App. Open the Alexa App. Select More, then Skills & Games. Swipe down and select Your Skills. Select a Skill then tap Settings > Disable Skill.
