Check in your Account Order History to see if the game shows up: https://account.microsoft.com/billing/orders/ If it still doesn't show up I'd contact Minecraft Support here: https://help.minecraft.net/hc/en-us/requests/new I hope it helps.
View your Microsoft Store order history. To review app, game or subscription purchases, track orders or view and print invoices, sign in to the order history page on your Microsoft account dashboard. Make sure you sign in with the account you used to make the purchase.

Sign in to your Microsoft account at account.microsoft.com. Select Payment & billing > Order history. If you see a completed purchase, restart the game, and then search for the Minecoins in the in-game store again. If that doesn’t work, restart the device that you’re using to access Minecraft.
