a medium and small creature takes up a 5x5 space, large is a 10x10, huge is 15x15, and gargantuan is 20x20 and up. so if you were already large, then doubled your dimensions youd be gargantuan, where as if you were large and increase a size category you only become huge, at 15x15.
In the PHB, the rules for gargantuan creatures state that they're 20x20 ft. or larger. That last bit is key - your gargantuan creatures can be as colossal as you like! If you're playing on a virtual tabletop, which I'm assuming since you said token, then just scale it up to be as large as you like.
Monster manual says gargantuan size is 20 ft by 20ft, or larger. So when a statblock says gargantuan, how do I know if it's larger than 20 ft by 20 ft? Edit: thanks all for the information
