According to this search, it seems that the average reading speed for adults tends to be around 250 words per minute? With some reading 150 words per minute and others 300? I don't know how accurate this data is, but it can give you an estimate.
If you don't read out loud or listen to audio, it should be significantly quicker to get through the book. VNDB estimates I presume are based on reading it yourself and not listening to the entire audio sample. 30 hours unvoiced is actually already longer than the long novels out there.
The time spent reading a visual novel will of course vary from person to person. The length labels on VNDB are generalized and mostly based on the size of the game script. F/SN, labeled very long (> 50 hours,) happens to have 12mb of text, which is very big. Tsukihime has 4mb of text, and is labeled long (30-50 hours.)
In the case of separate files, you'll need to be drawing at a higher resolution, ideally 2x (so: 3000px tall (FHD), 2000px tall (HD)), and then export the normal sprites at half resolution and the closeups at full resolution.
