For best quality video, HDMI with a capture card. For pretty good web quality video and convenience just use the webcam driver with a USB cable. Zoom will downscale and compress whatever you send it, degrading most if not all of the quality boost you get from a clean HDMI feed.
The biggest technical advantage is to lower cost by bypassing the need for a capture card/using the clean HDMI out. I finally have a stable working setup with my Canon EOS M200 over USB. I can run a stream for hours, no overheating and great quality picture. Here is my recipe for success:
