Would it be possible to mod an HDMI port onto the original Xbox 360? I've looked on youtube and found minimal stuff about it, and I want to prepare an xbox for my brother for Christmas, but don't want to use any bulky adapters.

You can optionally also install a couple of switches and set up a so called Dual NAND. This will allow you to retain your Live enabled state of the 360.
