8 bit and 16 bit are just the length of code that is used to describe the color. If 8 bits are used, you get about 16,000,000 colors to choose from. When 16 bit is used, you get about 28,000,000,000. Nowadays, there are pretty much infinite shades of colors you can make on a gradient.
