6 lut 2012 · I'll tell you what I can. The FH and Kagayaki are in entirely different categories. The Kagayaki VG-10 is a big bang for the buck knife, entry level VG-10, with short, narrow handles, and medium F&F. The FH is a top-end offering by a top-end manufacturer, which happens to be gorgeous.

But some of the pictures of their grind are really not confident inspiring, I understand choil pic are not representative, but it just seems very thin and flat...
Knife: Hattori Forums FH Series 210mm Gyuto with olive wood handle. Cutting board: Larch Wood Canada standard line large cutting board. Awesome knife, very sharp, a little pricey for VG10 but Hattori knows their stuff. The handle is extremely comfortable and fits perfectly in my hand.
12 sie 2005 · The blade is VG10 and Hattori have the reputation for really nailing the heat treatment of this steel. Not chippy and easier to sharpen than some other VG10 knives. I bought its while back from Japanese Chef Knives in Japan to use as a blade pattern. The handle is linen Micarta and the bolsters are stainless.
