Latiya, pronounced la-tee-dza, is Guam's yummy cake. It is custard poured over sponge cake or pound cake. The custard is made with or without eggs, however the recipe in A Taste of Guam uses eggs for a rich, luscious and delish dessert.
This dessert is a classic Chamorro dish, hailing from Guam and its surrounding islands, and is a family favorite of Feedfeed’s @marandaeve! Slices of fluffy pound cake are topped with a homemade custard flecked with vanilla bean and packed with bits of fresh mango (a non-traditional, but welcome pop of tropical, fruity flavor!).

However, using coconut milk and FRESHLY GRATED COCONUT takes you out to coconut never-never land! Coconut milk alone makes a subpar latiya; sweetened, store-bought coconut is in the same boat.
