Gravity Falls, Avatar The Last Airbender, The Owl House, and Amphibia are undoubtably top 4 for me. Most of the comments here have very different shows but the one thing they have in common is all of them have gravity falls and ATLA which is saying something.

My all time favorite is Adventure Time. Others I hold in high regard include Avatar, Venture Brothers, Futurama, Bob's Burgers, Regular Show, Samurai Jack, early PPG/Dexter's Lab, Foster's Home for Imaginary Friends.
Adventure Time is straight up one of the best cartoons of all time. It seems weird and fantastical on the surface but it’s genuinely philosophical, hilarious, not to mention the world building, character arcs that happen over course of the series. I highly recommend checking out any of the miniseries made, as well as the HBO specials.
