I use Gmail a lot, and the solution that is working for me (in Brave / Chrome) is to dedicate one browser to Gmail (I'm using Brave beta) and then enable the dark mode option found in brave://flags (or chrome://flags) and set it to 'enabled with increased text contrast'.
