I'd use crab stats, remove bonus to stealth, remove blindsight and add 1 AC. So 2 (1d4) hp, 12 ac and 1 damage with a +0 modifier to hit. In tomb of annihilation there are stats for a giant snapping turtle, but in base 5e there isnt a stat block for a snapping turtle.
