Emergency calls don't require a SIM card, 112 calls connect to local emergency numbers (part of the GSM standard), that's how Gevey Sims get on the network. I found this with a quick search, looks like they updated the method but you have to jailbreak.

Depends on the phone you're using and the network it's locked to. I have an iPhone 4S that is unlocked with Gevey Ultra S, no problem at all. I also had an iPhone 5 that I unlocked with R-SIM Mini, but apparently these proxy SIMs don't work well with 3G so you have to use a tool called iRose to make it 2G-only.
