Install the latest version of iTunes from the Microsoft Store. Plug your iPod touch 2G in to your PC. Open iTunes, and navigate to your iPod touch 2G. Hold the Shift key on your keyboard, and press "Restore". Select the iPod2,1_4.2.1_8C148_Restore.ipsw file that you downloaded.

Go to Settings > General > Software Update > Automatic Updates. Turn on Download iOS Updates and Install iOS Updates. When an update is available, iPod touch downloads and installs the update overnight while charging and connected to Wi-Fi.
