Recently got a jailbroken switch that I am trying to put GameCube games on through lakka (dolphin). I use vimms lair for most of my roms for other consoles and have never had a problem. The GameCube roms there are nkit.iso which crash.
I just setup my Gamecube emulator on my PC, then stream it to my Switch using SkyNX. But there is other streaming apps you can use that work just as well. The lag is not noticable.

no, there is no good website to download gamecube isos. every gamecube iso is programmed to explode the computer after 10 minutes of continuous use. to avoid this, close and reopen your emulator every 10 minutes. Try vimm dot net, vault section.
